  • 2 pieces very ripe bananas, sliced Preferably with lots of brown spots.
  • 1 cup water
  • 3/4 cup brown sugar, packed Can substitute with white sugar for a different flavor.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon Optional: add a tiny pinch of nutmeg for extra flavor.
  • 1 pinch salt Enhances the banana flavor.

  1. Add the sliced bananas and water to a small saucepan. Bring it to a gentle simmer over medium heat.
  2. Once the bananas become soft and the water smells like banana, stir in the brown sugar, cinnamon, and salt.
  3. Keep the mixture at a low simmer for about 8 to 12 minutes, stirring often. Ensure the sugar is dissolved and the mixture thickens slightly.
  4. Turn off the heat and stir in the vanilla extract. Let sit for 5 minutes.
  5. Strain the mixture through a fine mesh strainer into a jar, pressing gently on the banana to extract the syrup.

Notes

Store the syrup in a clean jar in the refrigerator for about 1 week. For a thinner syrup for iced coffee, stir in a tablespoon of water at the end.
