Ingredients
  

Main Ingredients
  • 4 large large russet potatoes Choose russet potatoes for sturdy skins.
  • 2 tablespoons Olive oil or melted butter For brushing the potato skins.
  • to taste Salt For seasoning.
  • to taste Pepper For seasoning.
  • 1 cup Shredded cheddar cheese Or a mix of your choice.
  • 1/2 cup Cooked bacon, chopped Optional but highly recommended.
  • 1/2 cup Sour cream For topping.
  • 1/4 cup Green onions or chives For garnish.

Method
 

Preparation
  1. Bake the potatoes by scrubbing them, poking with a fork, and baking at 400°F until tender, about 50 to 60 minutes.
  2. Let them cool slightly, enough to handle without burning your fingers.
  3. Slice each potato in half lengthwise and scoop out most of the inside, leaving a rim to keep the skins sturdy.
  4. Brush inside and outside of the potato skins with oil or butter, and season with salt and pepper.
Crisping and Filling
  1. Place the potato skins cut side down on a baking sheet and bake for 10 minutes.
  2. Flip them cut side up, add cheese and bacon, then bake for an additional 5 to 7 minutes until melty and bubbling.
Serving
  1. Top with sour cream and green onions right before serving.

Notes

Ensure to leave a solid border when scooping the potatoes and brush both sides with oil to achieve crispy skins. The double bake is key for the best texture.
