Ingredients
  

Main Ingredients
  • 1 block Feta cheese Use a full block, not crumbles.
  • 2 cups Cherry tomatoes Can substitute grape tomatoes.
  • 3 tablespoons Olive oil Plus more for drizzling.
  • 2 cloves Garlic Fresh is best, but jarred garlic works.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Black pepper Adjust according to taste.
  • 1 teaspoon Italian seasoning Can substitute dried oregano.
  • 12 ounces Pasta Any shape, like penne, rotini, or bowties.
Optional Add-ins
  • 1 cup Spinach To be added after baking.
  • 1 tablespoon Red pepper flakes For heat, sprinkle after baking.
  • 1 lemon Lemon zest and juice For a fresh version.
  • 2 cups Protein (e.g. shredded chicken or cooked shrimp) For a protein boost.
  • 2 tablespoons Cream or cream cheese For a creamier sauce.
  • 1 cup Zucchini or bell peppers To be added before baking.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, toss cherry tomatoes with olive oil, minced garlic, salt, pepper, and Italian seasoning.
  3. Nestle the feta block in the middle of the tomatoes and drizzle with more olive oil.
  4. Bake for 30 to 35 minutes, until tomatoes burst and feta is soft and golden.
Cooking Pasta
  1. While the mixture bakes, cook your pasta according to package instructions.
  2. Reserve about half a cup of pasta water before draining.
Combining Ingredients
  1. Once baked, mash the tomatoes and feta together until creamy.
  2. Stir in the cooked pasta and a splash of pasta water as needed until glossy.
  3. Add any desired optional ingredients.

Notes

For best results, use a block of feta. Remember to save pasta water for sauce consistency. Roasting tomatoes until bursting enhances the flavor. Adjust salt after mixing due to the natural saltiness of feta.
