Ingredients
  

Main Ingredients
  • 4 slices sourdough bread Any sturdy bread works.
  • 1.5 to 2 cups shredded or sliced cheese (cheddar, Monterey Jack, pepper jack, or a blend) Shred your own cheese if possible for better melting.
  • 6 to 8 slices bacon Cook until crispy.
  • 1 large ripe avocado Use a ripe avocado for easy mashing.
  • 1 to 2 teaspoons lime juice Adjust to taste.
  • a pinch salt Add more to taste.
  • to taste black pepper Use fresh ground if possible.
  • as desired optional add-ins (diced red onion, chopped cilantro, jalapeno, garlic powder) Feel free to customize.
  • as needed butter or mayo For spreading on the outside of the bread; mayo browns beautifully.

Method
 

Preparation
  1. Cook bacon until crisp, then place it on a paper towel to drain.
  2. Mash the avocado in a bowl with lime juice, salt, and pepper. Optionally add chopped red onion or jalapeno and keep the guacamole thick.
Building the Sandwich
  1. Lay out the bread slices and spread butter or mayo on one side of each slice.
  2. Flip them so the unbuttered sides face up. Layer cheese first, then bacon, guacamole, and top with more cheese.
Cooking
  1. Heat a skillet over medium or medium low heat and place the sandwich in. Cook until the bottom is golden and cheese is melting.
  2. Flip gently and cook the other side, adjusting heat as necessary.
Serving
  1. Let the sandwich rest for about a minute before slicing. Serve immediately while the cheese is still melty.

Notes

For optimal results, keep the guacamole thick and do not overfill the sandwich to avoid spills. Have your sides ready before cooking.
