  • 2 slices fat slices of sturdy bread (sourdough is perfection) Use thick, good-quality bread.
  • 1 large ripe avocado, sliced or smashed Choose ripe avocados for best flavor.
  • 2 large eggs Cook to your preference.
  • 3-4 slices crispy bacon Cook until crispy for best texture.
  • to taste salt and pepper For seasoning.
Optional Ingredients
  • 1 dash of chili flakes For a spicy kick.
  • 1 squeeze lemon juice To enhance flavor.
  • to taste herbs Use any fresh herbs you have on hand.

Method
 

Preparation
  1. Cook the bacon in a pan over medium heat until crispy, then set aside.
  2. While the bacon cooks, toast the slices of sturdy bread in a toaster or pan until golden brown.
  3. In the same pan, crack the eggs and cook them sunny-side-up or to your desired doneness.
Assembly
  1. Smash or slice the ripe avocado and spread it evenly over the toasted bread.
  2. Top each piece of toast with crispy bacon and the cooked eggs.
  3. Season with salt, pepper, and optionally, chili flakes and a squeeze of lemon.

Notes

For a fun twist, try adding different toppings like sliced tomatoes, spinach, or feta cheese. This breakfast can also be made gluten-free with the appropriate bread.
