- Cook the bacon in a skillet until crisp, then set it on a paper towel and crumble it once it cools. Keep a little bacon fat in the pan for flavor.
- Brown the ground beef in the same skillet. If you’re adding onion, toss it in while the beef cooks so it softens up. Drain off extra grease.
- Turn the heat to low. Stir in cream cheese until it melts into the beef. Then add sour cream and mix until smooth and creamy.
- Stir in ketchup and mustard. Add salt and pepper to taste.
- Mix in most of the shredded cheddar and half the crumbled bacon. Save a little of both for the top.
- Spoon everything into a baking dish. Top with the rest of the cheese and bacon.
- Bake at 375°F (190°C) until hot and bubbly, about 12 to 15 minutes. Broil for an additional 1 to 2 minutes for extra browning.
- Serve warm with chips, toasted buns cut into triangles, or sturdy crackers.
Notes
Use freshly shredded cheese for best melting. Keep the heat low when adding dairy to prevent separation. Add a splash of milk or extra cheese for consistency adjustments.
