Ingredients
  

For the Bruschetta
  • 4 slices Thick slices of crusty bread Sourdough or any hearty loaf work well.
  • 1 ripe Avocado Soft but not mushy.
  • 1 cup Cherry tomatoes Halved or quartered depending on size.
  • 1 handful Fresh basil leaves Flat-leaf preferred, but curly works too.
  • 1 tablespoon Olive oil For tossing tomatoes.
  • to taste Salt and black pepper
  • 1 clove Garlic Optional, for rubbing on bread.
  • 1 tablespoon Balsamic glaze Optional, for drizzling.

Method
 

Preparation
  1. Slice the crusty bread thick, about half an inch.
  2. Toast the slices in the oven or skillet until golden brown.
  3. Optional: Rub the toasted bread slices with a cut garlic clove for added flavor.
  4. Smash the avocado in a bowl with a fork, adding a pinch of salt.
  5. Halve or quarter the cherry tomatoes, then toss them with olive oil.
  6. Roughly chop the basil leaves.
Assembly
  1. On each toast, spread a layer of smashed avocado.
  2. Top with the tomatoes and chopped basil.
  3. Sprinkle with salt, pepper, and optionally drizzle balsamic glaze over the top.

Notes

Store toppings and bread separately to keep crunch. This bruschetta is best served fresh. Consider adding other toppings like feta or mozzarella if desired.
