  • 2 large Eggs Soft-boiled for a jammy texture.
  • 1 ripe Avocado Should give slightly when pressed.
  • 2 slices Sourdough or whole grain bread Thick slices recommended.
  • 1 tbsp Lemon or lime juice To wake up the avocado flavor.
  • 1 tbsp Olive oil For drizzling.
  • 1 pinch Salt Flaky salt recommended.
  • 1 pinch Pepper Use freshly ground if possible.
Optional Ingredients
  • 1 tbsp Chili flakes For some heat.
  • 1 tbsp Everything bagel seasoning For added flavor.
  • 1 tbsp Chopped herbs Such as chives, parsley, or dill.
  • 1 tbsp Microgreens For added nutrition and freshness.

Method
 

Boil the eggs
  1. Bring a small pot of water to a gentle boil.
  2. Lower the eggs in carefully so they don’t crack.
  3. Set a timer for 6.5 to 7 minutes for soft-boiled eggs.
  4. Prepare a bowl of ice water while the eggs cook.
  5. After the timer goes off, transfer the eggs to the ice bath for 1-2 minutes, then gently peel.
Prep the avocado
  1. Cut the avocado, remove the pit, and scoop into a bowl.
  2. Add lemon juice, salt, and pepper, then smash with a fork until your desired texture is reached.
  3. Optional: Add chili flakes or seasoning for extra flavor.
Toast and assemble
  1. Toast the bread until golden and sturdy.
  2. Spread a generous layer of avocado on the toast.
  3. Slice soft-boiled eggs in half and place them yolk-side up on the avocado.
  4. Finish with a pinch of flaky salt, pepper, and a drizzle of olive oil.

Notes

For best results, choose good quality ripe avocados and maintain proper cooking times for perfect egg texture. This toast can be customized with various toppings.
