  • 1 squeeze lemon juice Optional but enhances flavor and prevents browning.
  • 1 teaspoon olive oil or butter For cooking the egg.

Method
 

Preparation
  1. Toast your slice of bread until golden, ensuring it’s crispy.
  2. Mash the ripe avocado in a bowl, leaving some chunks. Season with salt, lemon juice, and black pepper.
Cooking the Egg
  1. In a small pan, heat olive oil or butter over medium heat.
  2. Crack the egg into the pan and cook until the whites are set, for a runny yolk, about 2-3 minutes then remove from heat.
Assembly
  1. Spread the mashed avocado generously over the toasted bread.
  2. Place the cooked egg on top of the avocado.
  3. Finish by sprinkling everything bagel seasoning over the avocado and egg, adding any desired toppings.

Notes

For optimal flavor, be sure to season the avocado mash inside, not just on top. Consider using lemon juice to enhance the taste and keep the avocado fresh.
