Authentic Ceviche

Ingredients
  

Main Ingredients
  • 1 to 1.25 pounds very fresh white fish (sea bass, snapper, halibut, or tilapia) Buy from a trusted source.
  • 3/4 cup fresh lime juice Plus more to taste.
  • 1/2 cup fresh lemon juice Optional, but adds balance.
  • 1 small red onion, thinly sliced
  • 1 to 2 pieces Roma tomatoes, diced Optional.
  • 1 piece cucumber, peeled and diced Optional but refreshing.
  • 1 piece jalapeno or serrano, finely chopped Remove seeds for a milder flavor.
  • 1/2 to 1 cup chopped cilantro
  • 3/4 teaspoon salt Start with this and adjust.
  • a few pinches black pepper
  • a little splash orange juice Optional, for sweetness.

Method
 

Preparation
  1. Slice the red onion thin and rinse it under cold water for about 20 seconds, then let it drain.
  2. Pat the fish dry and cut it into small, even cubes.
  3. Put the fish in a glass bowl and pour in the lime juice (and lemon if using). Stir gently.
  4. Cover and refrigerate for 20 to 35 minutes, stirring once halfway through.
  5. Add red onion, cilantro, jalapeno, and optional extras like tomato and cucumber. Season with salt and pepper.
  6. Taste and adjust salt and lime as necessary.

Notes

Ceviche is best served chilled. Pair it with tortilla chips, in lettuce cups, or with warm corn tortillas.
