Ingredients
  

For the salad
  • 2 cups cooked chicken, shredded or sliced Rotisserie chicken is perfect.
  • 8 oz noodles (rice noodles, soba, or spaghetti) Rinse in cold water after cooking.
  • 2 cups cabbage, shredded Use a mix of green and red cabbage.
  • 1 cup carrots, shredded or matchsticks For crunch.
  • 1 cup cucumber, thinly sliced or julienned Adds freshness.
  • 1/2 cup green onions, chopped Use generously for a fresh taste.
  • 1/4 cup cilantro, chopped Optional.
  • 1/4 cup chopped peanuts or cashews For crunch.
  • 1 tbsp sesame seeds Optional.
For the dressing
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar or lime juice
  • 1 tbsp honey or brown sugar
  • 1 tbsp toasted sesame oil
  • 1 clove garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp sriracha or chili flakes For heat, optional.
  • 2 tbsp peanut butter Optional for a creamy texture.
  • 1-2 tbsp warm water To loosen the peanut butter.

Method
 

Preparation
  1. In a large pot of boiling water, cook the noodles according to package instructions. Drain and rinse in cold water.
  2. In a big mixing bowl, combine the shredded chicken, noodles, shredded cabbage, carrots, cucumber, green onions, cilantro, chopped peanuts or cashews, and sesame seeds.
  3. In a small bowl or jar, whisk together the soy sauce, rice vinegar or lime juice, honey or brown sugar, sesame oil, garlic, ginger, and optional sriracha or chili flakes. For a creamy dressing, add peanut butter and warm water.
Assembly
  1. Pour the dressing over the salad and gently toss to combine until everything is evenly coated.
  2. Let the salad sit for about 10 minutes before serving to allow the flavors to meld.

Notes

This salad is customizable; you can adjust the protein and vegetables based on your preferences. Keep the dressing separate if making ahead of time to ensure freshness.
