  • 2 pieces apples (Gala or Honeycrisp recommended) Use crisp varieties to avoid browning.
  • 1 big handful mixed greens or spinach
  • 1/2 cup chopped walnuts Toast for enhanced flavor.
  • 1/4 cup crumbled feta or goat cheese Can substitute with sharp cheddar.
  • 1 handful dried cranberries Optional.
Maple Dijon Dressing
  • 2 tablespoons maple syrup Can substitute with honey.
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 cup olive oil
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Preparation
  1. Whisk together maple syrup, mustard, vinegar, olive oil, salt, and pepper in a jar or mug.
  2. Wash and slice the apples. To prevent browning, dip in lemon water.
  3. In a large bowl, combine mixed greens, sliced apples, toasted walnuts, and cheese.
  4. Drizzle with the maple dijon dressing and toss gently.
Serving
  1. Serve immediately or keep the apples and dressing separate if making ahead.

Notes

For a twist, add grilled chicken or tofu. This salad holds up well for gatherings if you keep the dressing separate until serving.
