Method
Preparation
- Preheat your oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan with parchment paper.
- In a mixing bowl, combine the flour, baking powder, salt, and ground cinnamon.
- In another mixing bowl, whisk together granulated sugar, brown sugar, eggs, milk, vanilla extract, and melted butter or oil.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Gently fold in the diced apples.
Assembling the Bread
- Spoon half of the batter into the prepared loaf pan, followed by a layer of diced apples and a sprinkle of cinnamon sugar.
- Repeat with the remaining batter and top with more apple and cinnamon sugar.
- Use a butter knife to gently swirl the layers together.
Baking
- Bake in the preheated oven for about 60 minutes or until a toothpick inserted in the center comes out clean. Start checking around 45 minutes.
- If the top is browning too quickly, loosely cover it with foil.
Glazing
- Let the bread cool in the pan for at least 20 to 30 minutes before lifting it out.
- In a small bowl, mix the cream cheese, powdered sugar, vanilla extract, and a splash of milk until smooth.
- Spread the cream cheese glaze over the top of the cooled bread.
Notes
For a less sweet glaze, consider adding a pinch of salt or a squeeze of lemon. Use apples that hold their shape, such as Granny Smith or Honeycrisp, for best results.
