Apple Fritter Bread with Cream Cheese Glaze

  • 2 cups All purpose flour
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 2 teaspoons Ground cinnamon
  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 2 large Eggs
  • 1/2 cup Milk
  • 1 teaspoon Vanilla extract
  • 1/2 cup Butter or neutral oil
  • 2 cups Apples, peeled and diced small
Cream Cheese Glaze Ingredients
  • 4 ounces Cream cheese
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan with parchment paper.
  2. In a mixing bowl, combine the flour, baking powder, salt, and ground cinnamon.
  3. In another mixing bowl, whisk together granulated sugar, brown sugar, eggs, milk, vanilla extract, and melted butter or oil.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the diced apples.
Assembling the Bread
  1. Spoon half of the batter into the prepared loaf pan, followed by a layer of diced apples and a sprinkle of cinnamon sugar.
  2. Repeat with the remaining batter and top with more apple and cinnamon sugar.
  3. Use a butter knife to gently swirl the layers together.
Baking
  1. Bake in the preheated oven for about 60 minutes or until a toothpick inserted in the center comes out clean. Start checking around 45 minutes.
  2. If the top is browning too quickly, loosely cover it with foil.
Glazing
  1. Let the bread cool in the pan for at least 20 to 30 minutes before lifting it out.
  2. In a small bowl, mix the cream cheese, powdered sugar, vanilla extract, and a splash of milk until smooth.
  3. Spread the cream cheese glaze over the top of the cooled bread.

Notes

For a less sweet glaze, consider adding a pinch of salt or a squeeze of lemon. Use apples that hold their shape, such as Granny Smith or Honeycrisp, for best results.
