Ingredients
  

For the Cake
  • 1 cup butter, softened
  • 1.5 to 2 cups sugar Adjust based on desired sweetness
  • 4 large eggs
  • 0.5 cup sour cream or Greek yogurt For tenderness

  • 3 cups flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 to 2 teaspoons cinnamon
  • 1.5 cups diced apples Peeled and small diced, use apples you like
For the Glaze
  • 1 cup powdered sugar Start with this amount
  • 1 to 1.5 teaspoons ground cinnamon
  • 2 to 4 tablespoons milk or cream Add slowly to achieve desired consistency
  • 0.5 teaspoon vanilla extract Optional, but recommended
  • a pinch salt Enhances sweetness

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a Bundt pan using soft butter and dust with flour.
  3. In a bowl, mix the softened butter and sugar until fluffy and lighter in color.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream and vanilla extract.
  6. In a separate bowl, combine flour, baking powder, salt, and cinnamon.
  7. Gradually fold the dry ingredients into the wet mixture until just combined, avoiding overmixing.
  8. Gently fold in the diced apples, optionally tossed with a spoonful of flour and cinnamon.
Baking
  1. Pour the batter into the prepared Bundt pan and smooth the top.
  2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted comes out clean.
  3. Allow the cake to cool in the pan for 15 minutes, then flip onto a cooling rack.
Making the Glaze
  1. In a bowl, whisk the powdered sugar and cinnamon together to avoid clumps.
  2. Gradually add milk, one tablespoon at a time, until you reach a drizzling consistency.
Glazing and Serving
  1. Once the cake is completely cooled, drizzle the glaze over the top.
  2. Let it set before slicing and serving.

Notes

For best results, store the cake in an airtight container at room temperature for up to 3 days, or in the fridge for up to 6 days. It freezes well; wrap slices in plastic and store in a freezer bag for up to 3 months.
