Preparation
- Preheat the oven to 350°F (175°C).
- Grease a Bundt pan using soft butter and dust with flour.
- In a bowl, mix the softened butter and sugar until fluffy and lighter in color.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream and vanilla extract.
- In a separate bowl, combine flour, baking powder, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until just combined, avoiding overmixing.
- Gently fold in the diced apples, optionally tossed with a spoonful of flour and cinnamon.
Baking
- Pour the batter into the prepared Bundt pan and smooth the top.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for 15 minutes, then flip onto a cooling rack.
Making the Glaze
- In a bowl, whisk the powdered sugar and cinnamon together to avoid clumps.
- Gradually add milk, one tablespoon at a time, until you reach a drizzling consistency.
Glazing and Serving
- Once the cake is completely cooled, drizzle the glaze over the top.
- Let it set before slicing and serving.
Notes
For best results, store the cake in an airtight container at room temperature for up to 3 days, or in the fridge for up to 6 days. It freezes well; wrap slices in plastic and store in a freezer bag for up to 3 months.
