Ingredients
  

For the bread
  • 2 cups all-purpose flour Can be substituted with gluten-free mix.
  • 1 cup granulated sugar Can be reduced to half a cup for less sweetness.
  • 2 large eggs Room temperature preferred.
  • 1 cup milk Almond milk can be used as a substitute.
  • 1 tsp baking soda
  • 1/2 cup butter Use real butter for best results.
  • 1 tsp vanilla extract Optional, but adds flavor.
For the cinnamon swirl
  • 1/2 cup granulated sugar For the cinnamon sugar layer.
  • 2 tbsp ground cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking soda, and a pinch of salt.
  3. In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined. Do not overmix.
  5. In a small bowl, combine the sugar and cinnamon for the swirl.
Baking
  1. Pour half of the batter into the prepared loaf pan.
  2. Sprinkle half of the cinnamon sugar mixture over the batter.
  3. Pour the remaining batter on top and then sprinkle the rest of the cinnamon sugar on top.
  4. Using a butter knife, swirl the cinnamon sugar gently into the batter.
  5. Bake in the preheated oven for about 45 to 50 minutes, or until a toothpick inserted comes out clean.
Cooling
  1. Let the bread cool in the pan for at least 10 minutes before transferring to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature. This bread can also be frozen for longer storage, and it toasts beautifully for a nice breakfast treat.
