  • 1 can mandarin oranges, drained really well
  • 1 can pineapple chunks or tidbits, drained really well
  • 1 to 1.5 cups mini marshmallows
  • 1 cup whipped topping (or homemade whipped cream)
  • 1 cup vanilla yogurt or plain Greek yogurt optional but adds a nice tang
  • 1/2 cup shredded coconut optional
  • 1/2 cup halved grapes or chopped strawberries optional for extra freshness
  • a pinch salt helps enhance the flavor

Preparation
  1. Step 1: Drain the mandarin oranges and pineapple. Let them sit in a strainer for about 5 minutes to ensure they are well-drained.
  2. Step 2: In a large bowl, combine the drained fruit and mini marshmallows. Add grapes, strawberries, or coconut if using.
  3. Step 3: In a small bowl, mix the whipped topping with yogurt (if using) and add a pinch of salt.
  4. Step 4: Fold the creamy mixture into the fruit gently to keep the pieces intact.
  5. Step 5: Cover and chill for at least 1 hour, preferably 2 hours, to allow flavors to blend.

Notes

For an attractive presentation, serve in a clear glass bowl. Chill before serving and keep it cold if sitting out. Use fruits that are not overly juicy to prevent the salad from getting watery.
