Main Ingredients
  • 3 medium Very ripe bananas, mashed Look for bananas with brown spots.
  • 1 piece egg Can be substituted with flax or applesauce.
  • 1/3 cup melted butter or neutral oil Provides moisture to the bread.
  • 1/2 cup sugar Can mix white and brown sugar.
  • 1 teaspoon vanilla Adds flavor.
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda Leavening agent.
  • 1/2 teaspoon cinnamon Optional, but recommended.
  • 1/4 teaspoon salt Balances sweetness.
Optional Add-ins
  • 1/2 to 3/4 cup chopped walnuts, chocolate chips, or peanut butter Choose one or mix them up, but don't overdo it.

Method
 

Preparation
  1. Mash the bananas in a bowl until mostly smooth.
  2. Whisk in the egg, sugar, melted butter, and vanilla.
  3. Sprinkle in the flour, baking soda, cinnamon, and salt.
  4. Stir until you do not see dry flour anymore; do not overmix.
  5. Grease your pan and add the batter, smoothing the top.
Cooking
  1. Preheat the air fryer if necessary, then bake at 320°F for about 28 to 38 minutes.
  2. Start checking at 25 minutes. If the top is too dark, loosely cover it with foil.
  3. Perform a toothpick test to check doneness; it should come out with a few moist crumbs.
Cooling
  1. Let it cool for at least 15 minutes before slicing.

Notes

For best results, use very ripe bananas. Store the banana bread wrapped tightly to keep it moist.
