  • 1 cup peanut butter Use regular creamy peanut butter for best results.
  • 1 cup sugar You may reduce if using salty peanut butter.
  • 1 large egg For a vegan alternative, use a flax egg.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a medium bowl, mix the peanut butter, sugar, and egg until the mixture appears thick and glossy.
  3. Scoop small balls of dough, about 1 tablespoon each, and optionally roll them between your palms.
  4. Place the balls on the baking sheet with some space between them.
  5. Use a fork to create a crisscross pattern on top of each ball.
Baking
  1. Bake for 9 to 11 minutes, until the edges are set and the tops appear slightly crackly.
  2. Let them cool on the pan for 5 minutes before transferring to a plate or rack.

Notes

Store in an airtight container for 3 to 4 days at room temperature. For longer storage, freeze for up to 2 months. If cookies become soft, leave the container lid slightly cracked for an hour to restore some crispness.
