Favorite Vegetable Soup + Grilled Cheese Croutons is just what I needed these last couple of days 🙂 Rain this past weekend gave me the perfect chance to make(and eat) soup! This is basically tomato soup with veggies added in 😁or at least it is veggie soup with a tomato base. I sometimes make it with caramelized onions and a beef broth base which is also yummy! This recipe makes a lot of soup which is fun for leftovers! Out of this batch I put 2 quarts in the freezer for later and I still had a couple of days of leftovers for lunch!
Food in the freezer is always a good idea for those days that are just so busy or lazy… I’m sure we have all been there 😅
°450 g (1 lb) beef cubes
°750 ml (3 cups) beef broth
°15 ml (1 tbsp.) garlic
°2 potatoes cut to cubes
°2 carrots cut into small cubes
°1 minced leek
°1 chopped onion
°Salt and pepper to taste
°250 ml (1 cup) of green peas
In the slow cooker, place all the ingredients, except the green peas.
Cover and cook for 7 hours 30 minutes to 9 hours 30 minutes at low intensity.
Add the green peas to the slow cooker and stir. Cover and continue cooking for 30 minutes at low intensity.
