  • 2 cloves 2 garlic, minced

  • 1 teaspoon 1 ginger, minced

  • 1 tablespoon 1 (8g) cornstarch

  • For the Casserole:
  • 1.5 pounds 1.5 (680g) boneless, skinless chicken breasts, cut into bite-sized pieces

  • Salt and pepper, to taste

  • 1 tablespoon 1 (15ml) vegetable oil

  • 3 cups 3 (570g) cooked white rice

  • 2 cups 2 (260g) mixed vegetables (e.g., carrots, peas, corn)

  • 1/2 cup 1/2 (120ml) teriyaki sauce (see above)

  • 1 cup 1 (150g) shredded mozzarella cheese

  • Green onions, sliced (for garnish)

Directions
