Ingredients:

  • 4 large eggs
  • Salt and pepper, to taste
  • 4 large flour tortillas (10-inch size)
  • 8 breakfast sausage links, cooked and sliced lengthwise
  • 1 cup shredded cheddar cheese
  • Cooking spray or butter, for cooking

How to Make Sausage, Egg, and Cheese Breakfast Roll-Ups:

  1. Prepare the Eggs:
    1. In a bowl, whisk together the eggs with salt and pepper.
    2. Heat a non-stick skillet over medium heat and scramble the eggs until fully cooked. Set aside.
  2. Assemble the Roll-Ups:
    1. Lay out the tortillas on a flat surface.
    2. Divide the scrambled eggs evenly among the tortillas, spreading them in a line down the center.
    3. Place 2 sliced sausage links on top of the eggs on each tortilla.
    4. Sprinkle shredded cheddar cheese over the sausage and eggs.
  3. Roll Up:
    1. Fold the sides of each tortilla inward, then roll up tightly from the bottom to enclose the filling.
  4. Cook the Roll-Ups:
    1. Heat a large skillet or griddle over medium heat and lightly grease with cooking spray or butter.
    2. Place the rolled-up tortillas seam-side down onto the skillet.
    3. Cook for 2-3 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is melted.
  5. Serve:
    1. Remove from heat and let cool slightly before slicing each roll-up in half diagonally.
    2. Serve warm and enjoy!
