Ingredients

  • 3 pounds 3 (1.4kg) chuck roast

  • Salt and black pepper, to taste

  • 2 tablespoons 2 vegetable oil

  • 1 1 onion, chopped

  • 2 cloves 2 garlic, minced

  • 2 cups 2 (480ml) beef broth

  • 1 cup 1 (240ml) red wine (optional)

  • 2 2 bay leaves

  • 1/2 teaspoon 1/2 dried thyme

  • 1/2 teaspoon 1/2 dried rosemary

  • 2 tablespoons 2 all-purpose flour (for thickening, optional)

  • Chopped fresh parsley, for garnish (optional)

Directions

  • Preheat your oven to 325°F (163°C).
  • Season the chuck roast generously with salt and black pepper on all sides.
  • In a large oven-safe Dutch oven or heavy-bottomed pot, heat the vegetable oil over medium-high heat.
  • Sear the seasoned chuck roast on all sides until it develops a deep brown crust. Remove the roast from the pot and set it aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes, or until the onion becomes translucent.
  • Pour in the beef broth and red wine (if using), stirring to deglaze the pot and scrape up any browned bits from the bottom.
  • Return the seared chuck roast to the pot. Add the bay leaves, dried thyme, and dried rosemary.
  • Cover the pot and transfer it to the preheated oven. Allow the roast to cook for about 2.5 to 3 hours, or until it becomes fork-tender.
  • If you’d like a thicker gravy, you can remove the chuck roast from the pot and whisk in 2 tablespoons of all-purpose flour into the gravy. Return the roast to the pot.
  • Garnish with chopped fresh parsley, if desired.
  • Serve your Melt-in-Your-Mouth Chuck Roast hot, accompanied by your favorite side dishes. Savor the homemade comfort!
