Overnight Breakfast Casserole

For the dish:

1 pound breakfast sausage ground

4 cup sharp cheddar grated

12 eggs

1 large onion chopped

1 bell pepper red Chopped

1 Cup heavy whipping cream

One cup chopped green onion diced (1/2 cups?)

8 oz sliced mushrooms

Freshly ground and Kosher-kosher pepper to your taste

To make gravy:

2 cups milk

1/4 cup all-purpose flour

2 tablespoons butter or oil

Freshly ground and Kosher-kosher pepper to your taste



Once you are ready to bake heat oven to 350°F. Lightly grease a baking dish 9×13 inches and place it aside.

In a large, heavy-bottomed skillet on medium-high heat, cook the sausage and break it up using the help of a wooden spoon. Once the meat is beginning to turn brown, add onions as well as mushrooms and bell peppers to the skillet. Cook until the vegetables soften and the meat is cooked about approximately 6-7 minutes. Mix in the green onion, and remove the meat and veggies from the skillet and allow to cool. (Do not wash the skillet.)

To warm gravy: Place gravy into a microwave-safe dish. Add a small amount of milk in order to make the gravy more flexible. Then cook for 45 seconds and stirring between each, until the gravy is warm. You can also cook it on medium-high heat on the stovetop, diluted with a tiny amount of milk.
