1 pound breakfast sausage ground

4 cup sharp cheddar grated

12 eggs

1 large onion chopped

1 bell pepper red Chopped

1 Cup heavy whipping cream

One cup chopped green onion diced (1/2 cups?)

8 oz sliced mushrooms

Freshly ground and Kosher-kosher pepper to your taste

To make gravy:

2 cups milk

1/4 cup all-purpose flour

2 tablespoons butter or oil

Freshly ground and Kosher-kosher pepper to your taste

 

PREPARATION

Once you are ready to bake heat oven to 350°F. Lightly grease a baking dish 9×13 inches and place it aside.

In a large, heavy-bottomed skillet on medium-high heat, cook the sausage and break it up using the help of a wooden spoon. Once the meat is beginning to turn brown, add onions as well as mushrooms and bell peppers to the skillet. Cook until the vegetables soften and the meat is cooked about approximately 6-7 minutes. Mix in the green onion, and remove the meat and veggies from the skillet and allow to cool. (Do not wash the skillet.)

When the meat and vegetables are cool, prepare the gravy.

Pour butter or oil into unwashed skillet. When it’s melted, mix into flour and let it cook for 2 minutes.

Whisk in the milk slowly and cook until the gravy gets thicker. Continue to simmer for about 2 minutes and add the salt and spice. Cover and place aside (or place in a container and chill over night).

In the baking dish that you’ve prepared Crack eggs equally across the dish’s bottom and keep yolks intact. Make a hole in each yolk using a toothpick. Then add cream to the eggs’ top. Sprinkle with half portion of cheese.

Pour the sausage mixture over eggs , cream and baking dish. then sprinkle with cheese. Cover the dish with foil and let it sit overnight.

Bake covered in oven preheated in the oven for about 30 minutes. Remove the foil and bake for an additional 30 minutes. Serve with country gravy and take your time!

To warm gravy: Place gravy into a microwave-safe dish. Add a small amount of milk in order to make the gravy more flexible. Then cook for 45 seconds and stirring between each, until the gravy is warm. You can also cook it on medium-high heat on the stovetop, diluted with a tiny amount of milk.
