Ingredients

  • 2 cups 2 (250g) all-purpose flour

  • 1/2 cup 1/2 (100g) granulated sugar

  • 1 tablespoon 1 baking powder

  • 1/2 teaspoon 1/2 salt

  • 1/2 teaspoon 1/2 ground nutmeg

  • 1/2 teaspoon 1/2 ground cinnamon

  • 2 large 2 eggs

  • 1 cup 1 (240ml) eggnog

  • 1/2 cup 1/2 (120ml) vegetable oil

  • 1 teaspoon 1 vanilla extract

  • Powdered sugar for dusting (optional)

Directions

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, sugar, baking powder, salt, nutmeg, and cinnamon.
  • In another bowl, beat the eggs and then add eggnog, vegetable oil, and vanilla extract. Mix until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps.
  • Spoon the batter into the muffin cups, filling each about 2/3 full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  • Optionally, dust with powdered sugar before serving.
