Hearty Cowboy Soup is a satisfying, budget-friendly bowl of comfort food comprised of nutritious vegetables, creamy beans, warm broth, and lean ground beef. It’s ideal for serving a large group of people, having a relaxed dinner on a weeknight, or having a party to watch the big game.
In no time at all, you’ll be as in love with this dish as I am. Gather the clan around the table and warm their souls with this hearty Tex-Mex stew. You can throw together this hearty soup in just 30 minutes using only cupboard staples. This hearty soup has all the hallmarks of traditional Tex-Mex cuisine, including ground beef, toasty spices, tart tomatoes, soft vegetables, and smooth beans. This hearty stew is excellent for a cold night in during the autumn or winter, or for a tailgate party in the fall.
Serve this soup with some good old-fashioned cornbread for a really southern meal. Soaking up all of that delicious broth? A big slice of cornbread, warm and crusty from the oven. And if you like things spicy, don’t forget to set out some hot sauce for your guests. Just a few drops elevate an already wonderful stew to a new level.
Ingredients:
2 Lbs Ground beef
4 Yukon Gold Potatoes
2 Cans Mixed vegetables Undrained
1 Can Sweet corn Undrained
1 Can Condensed tomato soup
1 Can Petite diced tomatoes
1 Can Cut green beans Undrained
Pinch Salt
Dash Pepper
2 Tablespoons Sugar
Instructions:
1. Peel potatoes and cut into small cubes.
2. Brown and drain ground beef
3. Place beef and potatoes in large slow cooker.
4. Add all cans of vegetables, can of tomato soup, and diced tomatoes.
5. Salt and pepper to taste.
6. Finally, add the secret ingredient that sets this apart from your average soup- sugar (thanks to my grandma Hazel)!!
Mix together well and cook on low for 2-3 hours in slow cooker.

Recipe Notes
Of course you can substitute fresh or frozen veggies, but would need to add a can or two of beef stock to this. No need to add this if using canned veggies, as you will be adding the cans undrained-which provides both liquid and flavor. Yum
