  • 2 cups 2 (250g) all-purpose flour

  • 1 cup 1 (200g) granulated sugar

  • 1/2 cup 1/2 (100g) brown sugar

  • 3/4 cup 3/4 (65g) unsweetened cocoa powder

  • 1 1/2 teaspoons 1 1/2 baking powder

  • 1 1/2 teaspoons 1 1/2 baking soda

  • 1/2 teaspoon 1/2 salt

  • 2 large 2 eggs

  • 1 cup 1 (240ml) mayonnaise (at room temperature)

  • 1 teaspoon 1 vanilla extract

  • 1 cup 1 (240ml) hot water

  • 2 ounces 2 (60g) unsweetened chocolate, melted and cooled

Directions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch (23cm) round cake pans.
  • In a large mixing bowl, sift together the all-purpose flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt.
  • In a separate mixing bowl, whisk together the eggs, mayonnaise, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients and mix until the batter is smooth.
  • Stir in the melted and cooled unsweetened chocolate until fully incorporated.
