Cheesecake Stuffed Baked Apples

A new way to eat baked apples โ€“ Cheesecake Stuffed Apples filled with walnuts and caramel sauce. Small batch recipe makes 4 apples as a dessert for two people.
Although to be honest, Iโ€™ve been ready for fall since Labor Day when Dad and I usually pick a peck of apples like we do every year.

I forgot to weigh the bag, but we like to say โ€œthis weighs more than the cat!โ€ It usually doesnโ€™t but itโ€™s still fun to play.

Since I have so many apple recipes on my blog including Mini Apple Pies and Homemade Apple Pie Filling, sometimes itโ€™s tough coming up with new ideas.

Then I started thinking about my Cheesecake Stuffed Peaches.

That recipe is so popular for summer, how can I recreate it for fall?

Baked apples are pretty common, usually stuffed with butter, cinnamon, and nuts. Why not take it one step further with Cheesecake Stuffed Apples?

The apples are cored then stuffed with a caramel cheesecake filling and walnuts.

Itโ€™s the ideal apple recipe to get a full serving size of fruit while also indulging in dessert.

What If I Donโ€™t Want To Use Melting Chocolate

So I used a chocolate almond bark for my chocolate. I did that because you want the outside of your apples to harden up nicely. If you want to use a classic chocolate chip you are welcome to.

I do recommend that you mix in 1 tablespoon of shortening. Then heat the chocolate chips up in the microwave or with a double boiler.

The shortening will help to give you a harder coating that you want for these apples!

Ingredients:

  • Apples
  • Cream cheese
  • Sugar
  • Vanilla extract
  • Cinnamon
  • Lemon juice
  • Graham cracker crumbs
  • Butter

Instructions:

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Wash and core the apples, leaving the bottom intact to create a well.
  3. In a bowl, mix cream cheese, sugar, vanilla extract, and a pinch of cinnamon until smooth.
  4. Fill each apple with the cheesecake mixture, pressing down gently.
  5. In a separate bowl, combine graham cracker crumbs, melted butter, and a sprinkle of cinnamon.
  6. Top each stuffed apple with the graham cracker mixture, pressing lightly.
  7. Place the stuffed apples in a baking dish and drizzle with lemon juice.
  8. Bake for 25-30 minutes or until the apples are tender and the cheesecake filling is set.
  9. Let the apples cool slightly before serving.
  10. Enjoy your decadent cheesecake stuffed baked apples!
