I have found that most people tend to have a love or hate attitude about goat cheese. I also discovered that many people who hate it have made their minds up about it before ever trying it.

At a party a few years ago, I actually served goat cheese to some ladies once and they loved it. When they asked what it was, one of the ladies threw up her arms and said she HATED goat cheese and refused to eat any more…despite having previously said she loved it! You can’t win them all.

Ingredients:

1 baguette, sliced
4 oz goat cheese, softened
1 cup fresh blueberries
1/4 cup balsamic vinegar
2 tbsp honey
Fresh basil leaves for garnish

Instructions:

Prepare Crostinis: Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and toast for 10 minutes until golden brown.

Make Balsamic Glaze: In a small saucepan, combine balsamic vinegar and honey. Simmer until reduced by half and thickened.

Assemble Crostinis: Spread goat cheese on each toasted slice. Top with fresh blueberries and drizzle with balsamic glaze.

Garnish and Serve: Garnish with fresh basil leaves. Serve immediately and enjoy!
