Ingredients

  • For the Pie Crust:
  • 3 cups 3 (360g) all-purpose flour

  • 1 teaspoon 1 salt

  • 1 cup 1 (2 sticks or 226g) unsalted butter, cold and cubed

  • 8 8 -10 tablespoons ice water

  • For the Apple Filling:
  • 8 cups 8 (about 8-10 apples, a mix of sweet and tart varieties), peeled, cored, and thinly sliced

  • 1 cup 1 (200g) granulated sugar

  • 1/4 cup 1/4 (30g) all-purpose flour

  • 1 teaspoon 1 ground cinnamon

  • 1/4 teaspoon 1/4 ground nutmeg

  • 1 tablespoon 1 lemon juice

  • 2 tablespoons 2 unsalted butter, cubed

Directions

  • For the Pie Crust:
  • In a large mixing bowl, combine the all-purpose flour and salt.
  • Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until it resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overmix.
  • Divide the dough in half and shape each half into a rectangle. Wrap them in plastic wrap and chill in the refrigerator for at least 30 minutes.
  • For the Apple Filling:
  • In a large mixing bowl, combine the sliced apples, granulated sugar, all-purpose flour, ground cinnamon, ground nutmeg, and lemon juice. Toss until the apples are evenly coated.
  • To Assemble:
  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper, leaving an overhang on the sides.
  • Roll out one of the chilled pie crusts into a rectangle on a lightly floured surface. Transfer it to the prepared baking sheet.
  • Spoon the apple filling evenly onto the pie crust.
  • Dot the apples with cubed unsalted butter.
  • Roll out the second pie crust into a rectangle and place it over the apples. Trim any excess crust and crimp the edges to seal.
  • Use a knife to create a few slits or decorative cutouts on the top crust to allow steam to escape.
  • Bake in the preheated oven for 45-55 minutes or until the crust is golden brown and the filling is bubbly.
  • Allow the pie to cool slightly before slicing into generous squares.
  • Enjoy your homemade Scrumptious Apple Slab Pie!
