Tips For Serving This Recipe

If you’re making this recipe for a party, I’d recommend making the feta + strawberries a couple hours to one day in advance. Prepare the bread and basil right before serving to maintain freshness.
Be sure to keep the whipped feta and roasted strawberries separate until serving. You will also want to CHILL both ingredients in the fridge – this will prevent the whipped feta from melting.
You can serve this recipe as a dip (as pictured) OR you can serve it as a crostini! If you’d prefer making crostini, simply slice up a baguette, toast the bread, spread whipped feta on each slice, top with a spoonful of strawberries, and garnish with fresh basil, black pepper, and a drizzle of olive oil.
If you don’t have a party to go to, but want to make this recipe anyway – simply enjoy it as an open-faced toast!
Leftovers will keep for a few days in airtight containers in the fridge. If you can store the feta separately from the strawberries, that’s best but not absolutely necessary.

Ingredients:

For the Whipped Feta:
8 oz (225 g) feta cheese, crumbled
4 oz (115 g) cream cheese, softened
1-2 tablespoons olive oil
1 tablespoon lemon juice
Freshly ground black pepper, to taste
For the Roasted Strawberries:
1 pint (2 cups) fresh strawberries, hulled and halved
1 tablespoon balsamic vinegar
1 tablespoon honey
Freshly ground black pepper, to taste

Garnish:

Fresh basil or mint leaves, chopped
Additional olive oil for drizzling
Black sesame seeds (optional)

Instructions:

Prepare the Roasted Strawberries:

Preheat your oven to 375°F (190°C).
In a mixing bowl, toss the halved strawberries with balsamic vinegar, honey, and a pinch of black pepper.
Spread the strawberries on a baking sheet lined with parchment paper.
Roast in the preheated oven for about 15-20 minutes, or until the strawberries are soft and slightly caramelized. Remove from oven and let cool.

Prepare the Whipped Feta:

In a food processor, combine the crumbled feta, cream cheese, olive oil, lemon juice, and a pinch of black pepper.
Process until smooth and creamy, scraping down the sides as needed. Adjust the consistency with a bit more olive oil if necessary.

Assemble the Dish:

Spread the whipped feta onto a serving plate or bowl, creating a swirl with the back of a spoon.
Spoon the roasted strawberries over the whipped feta.
Drizzle with additional olive oil and garnish with chopped fresh basil or mint leaves.
Sprinkle with black sesame seeds for extra texture and flavor, if desired.
