Strawberry Cheesecake Donuts

If you saw our out of the kitchen post from March โ€“ you most likely saw a picture of me throwing donuts into the garbage. Well.. that was the first and second batch of strawberry donuts. They were mushy and under cooked. A big thumbs down. And it was an even bigger bummer because I used gluten free flour to make them. Precious gluten free flour that costs an arm and a leg.. in the garbage. Such is the life of a food blogger.

Enter strawberry donuts round threeโ€ฆ Perfection. Not mushy. Not thick. These ones certainly did not end up in the garbage. They ended up in our bellies.
When I shoot on Saturdays, Ryan is usually working too, but at lab, so Iโ€™ll text him a picture of whatever Iโ€™m working on. When I sent him a picture of these donuts, he replied saying, โ€œthey are a work of art!โ€ Awww, sweet Ryan. I usually donโ€™t think of my own photography as a piece of art, but my heart is smitten with the first photo. I want to get it printed and hang it in my kitchen, but I think that could cause a lot of unnecessary donut cravings ๐Ÿ™‚

These strawberry donuts are topped with a cream cheese glaze and then drizzled with strawberry coulis. Coulis, pronounced koo-lee, is a fancy word for sauce. I learned it from watching Kids Baking Championship. Itโ€™s a tv show on the Food Network. Since all of the kids on the show are better bakers than I am, theyโ€™ve actually inspired me to try and make new things. Corny? Maybe, but I wish I had their baking skills when I was 12!

Ingredients:

For the Donuts:

2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
Vegetable oil for frying

For the Cheesecake Filling:

1 cup cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/4 cup heavy cream
For the Strawberry Glaze:
1 cup powdered sugar
2-3 tablespoons milk
1/2 teaspoon vanilla extract
1/2 cup finely chopped fresh strawberries

For Topping:

Fresh strawberries, sliced
Powdered sugar for dusting

Instructions:

Make the Donuts:

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
In another bowl, combine the milk, melted butter, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Heat the vegetable oil in a deep fryer or large pot to 350ยฐF (175ยฐC).
Using a donut cutter or a round cutter and a smaller cutter for the center, cut out the donuts from the dough.
Fry the donuts in batches until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
Prepare the Cheesecake Filling:
In a medium bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, beating until well combined.
Slowly add the heavy cream and continue to beat until the mixture is smooth and fluffy.
Transfer the cheesecake filling to a piping bag fitted with a small round tip.

Make the Strawberry Glaze:

In a bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Stir in the finely chopped fresh strawberries.
Assemble the Donuts:
Once the donuts are cool enough to handle, use a skewer or a small knife to make a hole in the side of each donut.
Pipe the cheesecake filling into the center of each donut until filled.
Dip the tops of the donuts into the strawberry glaze and place them on a wire rack to set.
Top with fresh strawberry slices and dust with powdered sugar.

Serve and Enjoy:
