  • 1 cup 1 (240ml) water

  • 1 teaspoon 1 dried thyme

  • 1 teaspoon 1 dried parsley

  • Salt and black pepper, to taste

  • 1 cup 1 (150g) frozen peas and carrots (optional)

  • 1 cup 1 (150g) frozen corn (optional)

  • For the Dumplings:
  • 2 cups 2 (240g) all-purpose flour

  • 1 tablespoon 1 baking powder

  • 1/2 teaspoon 1/2 salt

  • 1/2 teaspoon 1/2 dried thyme (optional)

  • 1 cup 1 (240ml) milk

  • 1/4 cup 1/4 (60ml) melted butter

Directions

  • In your crockpot, combine the boneless, skinless chicken thighs or chicken breasts, chopped onion, minced garlic, chicken broth, condensed cream of chicken soup, water, dried thyme, dried parsley, salt, and black pepper. Stir to combine.
  • Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours. The chicken should be tender and fully cooked.
  • About 30 minutes before serving, shred the cooked chicken using two forks. If using frozen peas and carrots and frozen corn, add them to the crockpot at this time.
