OATMEAL CHOCOLATE CHIP COOKIE BARS

Thick, chewy, loaded with chocolate chips, and amazing to bring to potlucks or serve to parties. These oatmeal chocolate chip cookie bars are super good and incredibly easy to make. Feel free to whip up a big batch and store it in the fridge for up to 7 to 10 days or freeze it for up to 3 months.

Ingredients

2 large eggs
1 c. butter, room temperature
½ c. granulated sugar
2 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
1 c. light brown sugar, packed
1 ½ c. all-purpose flour
½ tsp salt
2 c. chocolate chips, semi-sweet, milk chocolate, or a little of both
2 c. old-fashioned rolled oats

Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, lightly grease a 9 x 13-inch pan. Or you simply line the pan with parchment paper.

Step 2: Place the butter, brown sugar, and white sugar in a large mixing bowl. Beat well until smooth and light. Then, add the eggs one at a time, beating well every after each addition. Next, add the vanilla.

Step 3: Place the dry ingredients (salt, baking soda, baking powder, flour, and rolled oats) in another bowl. Mix well until combined.

Step 4: To the creamed mixture, add the dry ingredients and mix well until blended. Then, fold in the chocolate chips.

Step 5: Into the prepared pan, pour and press the mixture. Place in the preheated oven and bake for about 25 to 30 minutes or until the bar is golden brown.

Step 6: Remove from the oven when done and let the bar cool completely before cutting into bars.

 

Notes:

Once the cookie bar is completely cooled, cut it into squares. In a freezer-safe container or Ziplock bag, place the bars and freeze for up to 3 months.
