1 1/2 cups all-purpose flour
1/2 cup powdered sugar
1/2 teaspoon salt
3/4 cup unsalted butter, cold and cubed
2 large egg yolks
1 teaspoon vanilla extract
4-5 ripe peaches, sliced
1/4 cup granulated sugar
2 tablespoons cornstarch
1 cup heavy cream
1/2 cup whole milk
3 large egg yolks
1/4 cup granulated sugar
2 teaspoons vanilla extract
Fresh mint leaves for garnish


Preheat the oven to 350°F (175°C).
In a food processor, combine flour, powdered sugar, and salt. Add cold butter and pulse until the mixture resembles coarse crumbs.
Add egg yolks and vanilla extract, and pulse until the dough comes together. Press the dough into tartlet pans and refrigerate for 30 minutes.
Bake the tart crusts for 15 minutes or until golden brown. Let cool.
