Monterey Jack Shrimp Grilled Cheese on Homemade Garlic Bread

Shrimp Grilled Cheese – Parmesan topped sourdough bread surrounds garlic and lemon infused Gruyere and Mozzarella cheeses and tender shrimp to create a gourmet grilled cheese sandwich to remember!
This is definitely not your average grilled cheese. Imagine the flavors of a Shrimp Scampi Pizza recreated in an easy to prepare sandwich that can be made in an air fryer on on top of the stove any day of the week

I love the flavor combination of the Gruyere and mozzarella cheeses, but feel free to play with other types of cheese that you like.
Yes you can use larger shrimp if you prefer. Simply place the peeled, deveined shrimp in the garlic butter mixture and cook until pink and opaque.

Feel free to add chopped green onions or Italian parsley to the cheese mixture.
For a true shrimp scampi flavor, add a tablespoon white wine to the skillet when you add the shrimp.
You can always add more garlic and/or lemon for even more flavor.

Ingredients:

For the Garlic Bread:
1 large baguette, sliced in half lengthwise
4 tablespoons butter, softened
3 cloves garlic, minced
2 tablespoons chopped fresh parsley
For the Shrimp Filling:
1 lb shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon paprika
Salt and pepper to taste
For the Grilled Cheese:
8 slices Monterey Jack cheese
Additional butter for frying

Directions:

Prepare the garlic bread: Preheat oven to 375°F (190°C). Mix butter, garlic, and parsley in a small bowl. Spread evenly on baguette halves. Bake on a sheet for 10-12 minutes until golden. Remove and keep warm.
Cook the shrimp: In a skillet, heat olive oil over medium-high. Season shrimp with paprika, salt, and pepper. Cook 2-3 minutes per side until pink. Remove from heat.
Assemble the grilled cheese: Slice garlic bread into sandwich pieces. Layer one slice with Monterey Jack cheese, shrimp, more cheese, and top with another bread slice.
Grill the sandwiches: Heat a clean skillet with a bit of butter. Cook sandwiches until golden and cheese melts, about 3-4 minutes per side.
Serve: Cut diagonally and serve hot.
