Marinated Cucumbers, Onions, and Tomatoes

Delicious cucumber tomato salad tossed in a tangy red wine vinaigrette. A healthy summer side dish that complements any meal.

Marinated Cucumber, Tomato, and Onion Salad is the ideal summer serving of mixed greens. It’s both sweet and tart and the new freshness of the cucumbers and onions can’t be beat.

This late spring serving of mixed greens is a basic combination of oil, vinegar, sugar, salt and pepper alongside cut cucumbers, tomatoes, and onions. I love to serve it outrageously cold and will frequently add ice solid shapes to it not long prior to serving. So reviving on a blistering summer day!

The plain, summery tomato and cucumber salad provide a delightful comparison to the heavy flavors of the side dish. Dressings and seasoning are short, which is why you would want to want to consume more, and the cucumbers, onions, and tomatoes have an intense, pleasing crunch.

It’s not enough to just serve hot dogs and hamburgers though. I must have some other food items to serve. Most often, we serve some pasta salads and potatoes of some sort as a way to vary the menu and to ensure everyone is fed. In the past, I thought to test my mom’s cukes salad recipe.

Her recipes were always excellent and when I did achieve it, I was unable to recall what exactly happened to the recipe. She was away at a conference to attend work, and I was unable to reach her. It was through sheer luck that I came across the recipe from Spend With Pennies, and thank God that I found it!

The birthday of my son falls during the summertime, in the late spring and early summer season. This is why we typically host a barbecue for his birthday celebration. Who doesn’t love hot dogs? I like to keep it simple because I’m doing my best to run around like a chicken having my head chopped off, trying to make sure that everything is working perfectly. I do have an issue with things that aren’t running smoothly, especially when it’s my responsibility to ensure they are. Therefore, the only thing I need to think about is food. My husband grills the food so it’s all secured.

ingredient

Cucumbers: 3 medium (peeled and sliced 1/4 inch thick)
Tomatoes: 3 medium (cut into wedges)
Vinegar: 1/2 cup
Sugar1/4 c: up
Water: 1 cup
Salt: 2 teaspoons
Fresh coarse ground black pepper: 1 teaspoon
Oil: 1/4 cup
Fresh mint: 1 teaspoon (chopped) “optional”

Instructions

  1. To start off the recipe, get a large bowl and combine in all ingredients.
  2. And please toss well to mix.
  3. Finally, refrigerate for no less than 120 minutes before serving.
