Keto Fathead Pizza!!!

Fathead pizza dough makes the BEST low carb keto pizza crust recipe: Crispy, chewy, and ready in 20 minutes! Includes options for almond flour or coconut flour.
This fathead pizza dough recipe is a gluten-free, low carb, and keto dough that is made with mozzarella, cream cheese, egg, and some type of low carb flour. The melted cheeses create a chewy texture that’s often hard to achieve in low carb baking.

The original recipe for fathead pizza comes from the Fathead movie, a 2009 documentary seeking to refute the lipid hypothesis. The lipid hypothesis is the claimed link between high cholesterol and heart disease, and the source of the “low fat” way of eating promoted in the Western world since the 1950s. Numerous studies have debunked the claim (this is a good scientific paper on the subject citing many sources).

Fathead pizza crust has become a staple for many on a keto diet. It’s super easy to make and the texture is very close to real pizza! I’m sharing my adaptation of the keto pizza recipe with almond flour and coconut flour versions included

1½ cups (6 oz.) mozzarella cheese, shredded
2 tbsp cream cheese
¾ cup (3 oz.) almond flour
1 tsp white wine vinegar
1 egg
½ tsp salt
olive oil, to grease your hands
8 oz. fresh Italian sausage
1 tbsp butter
½ cup unsweetened tomato sauce
½ tsp dried oregano
1½ cups (6 oz.) mozzarella cheese, shredded

-Preheat the oven to 400°F (200°C).
-Heat mozzarella and cream cheese in a non-stick pan over medium heat or in a bowl in the microwave oven. Stir until they melt together. Add the other ingredients and mix well. Tip: use a hand mixer with dough hooks.
-Moisten your hands with olive oil and flatten the dough on parchment paper, making a circle about 8″ (20 cm) in diameter. You can also use a rolling pin to flatten the dough between two sheets of parchment paper.
-Remove the top parchment sheet (if used). Prick the crust with a fork (all over) and bake in the oven for 10–15 minutes until golden brown. -Remove from the oven.
-While the crust is baking, sautée the ground sausage meat in olive oil or butter.
-Spread a thin layer of tomato sauce on the crust. Top the pizza with meat and plenty of cheese. Bake for 10–15 minutes or until the cheese has melted.
-Sprinkle with oregano and enjoy!
