Ingredients

  • 4 large 4 orange bell peppers

  • 1 pound 1 ground meat (beef, turkey, or chicken)

  • 1 cup 1 cooked rice

  • 1/2 cup 1/2 diced onion

  • 1/2 cup 1/2 diced tomatoes (canned or fresh)

  • 1/2 cup 1/2 corn kernels (canned or frozen)

  • 1/2 cup 1/2 black beans (canned, drained, and rinsed)

  • 2 cloves 2 garlic, minced

  • 1 teaspoon 1 chili powder

  • 1/2 teaspoon 1/2 cumin

  • Salt and pepper to taste

  • Cooking oil for sautéing

  • Shredded cheese for garnish (optional)

Directions

  • Preheat your oven to 350°F (175°C).
  • Prepare the bell peppers by cutting off the tops and removing the seeds and membranes. Be sure to save the tops as you’ll use them later.
  • Using a sharp knife, carefully carve Jack-O’-Lantern faces on the front of each bell pepper. Set them aside.
  • In a large skillet, heat a bit of cooking oil over medium heat. Add the diced onion and garlic, and sauté until they become fragrant and translucent.

  • Stuff each bell pepper with the meat and rice mixture, pressing it down gently.

  • Arrange the stuffed peppers in a baking dish and cover with aluminum foil.
  • Bake in the preheated oven for 30-35 minutes or until the peppers are tender.
  • Remove the foil, garnish with shredded cheese if desired, and bake for an additional 5 minutes or until the cheese is melted and bubbly.
