  • 1.5 pounds 1.5 (680g) boneless, skinless chicken breasts, cut into strips

  • 1 1 onion, thinly sliced

  • 2 2 bell peppers (any color), thinly sliced

  • 1 cup 1 (240ml) salsa

  • 1 cup 1 (240ml) plain Greek yogurt or sour cream

  • 1 tablespoon 1 chili powder

  • 1/2 teaspoon 1/2 cumin

  • 1/2 teaspoon 1/2 garlic powder

  • 1/2 teaspoon 1/2 onion powder

  • Salt and black pepper, to taste

  • 2 cups 2 (200g) shredded cheese blend (e.g., cheddar and Monterey Jack)

Directions

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch (23x33cm) baking dish.
  • In a large skillet, cook the chicken strips over medium-high heat until they’re no longer pink. Remove the cooked chicken from the skillet and set it aside.
  • In the same skillet, add the thinly sliced onion and bell peppers. Sauté until they become tender and slightly caramelized, about 5-7 minutes. Remove from heat.
  • In a mixing bowl, combine the salsa, plain Greek yogurt or sour cream, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  • Place half of the sautéed onion and bell pepper mixture in the bottom of the prepared baking dish.
