1 tablespoon fresh dill, chopped
1 tablespoon fresh lemon juice
Salt and pepper, to taste

For the Greek Salad:

1 cup cherry tomatoes, halved
1 cucumber, sliced
1/2 red onion, thinly sliced
1/2 cup feta cheese, crumbled
1/4 cup Kalamata olives, pitted and sliced
2 tablespoons olive oil
1 tablespoon red wine vinegar
Salt and pepper, to taste

To Assemble:

4 pita breads or flatbreads
Fresh lettuce leaves
Extra cucumber slices, for garnish
Extra red onion slices, for garnish

Instructions:

Marinate the Chicken:

In a large bowl, combine the olive oil, minced garlic, dried oregano, ground cumin, lemon juice, salt, and pepper. Add the chicken breasts and coat them well with the marinade. Cover and refrigerate for at least 30 minutes, preferably 2 hours.

Cook the Chicken:

Preheat a grill or grill pan over medium-high heat. Grill the chicken breasts for 6-7 minutes on each side, or until fully cooked and no longer pink inside. Remove from the grill and let rest for 5 minutes before slicing into strips.

Prepare the Tzatziki Sauce:

In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper. Mix well and refrigerate until ready to use.

Make the Greek Salad:

In a large bowl, combine the cherry tomatoes, sliced cucumber, red onion, feta cheese, and Kalamata olives. Drizzle with olive oil and red wine vinegar, then season with salt and pepper. Toss gently to combine.

Assemble the Gyros:

Warm the pita breads or flatbreads on the grill or in a pan. Place a few lettuce leaves on each bread, then add the sliced grilled chicken. Top with cucumber slices, red onion slices, and a generous dollop of tzatziki sauce. Serve the Greek salad on the side.
