Why This Earthquake Cake:

Why This Earthquake Cake?

  • Decadent Chocolate Flavor: Rich chocolate cake mix combined with cream cheese and coconut.
  • Easy to Make: Uses simple ingredients and minimal prep time.
  • Versatile Dessert: Perfect for parties, potlucks, or just satisfying chocolate cravings.

Ingredients:

  • 1 box (15.25 oz) chocolate cake mix
  • 1/2 cup unsalted butter, melted
  • 1 cup water
  • 3 large eggs
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans

How to Make Earthquake Cake:

  1. Preheat and Prepare:
    1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. Mix the Cake Batter:
    1. In a large mixing bowl, combine the chocolate cake mix, melted butter, water, and eggs. Stir until smooth.
  3. Prepare the Cream Cheese Mixture:
    1. In another bowl, beat the softened cream cheese and softened butter until smooth and creamy.
    2. Add the vanilla extract and powdered sugar, and beat until well combined.
  4. Assemble the Cake:
    1. Pour the chocolate cake batter into the prepared baking dish, spreading it evenly.
    2. Drop spoonfuls of the cream cheese mixture on top of the cake batter.
    3. Sprinkle shredded coconut and chopped pecans evenly over the cream cheese mixture.
  5. Bake:
    1. Bake in the preheated oven for 40-45 minutes, or until the cake is set and the edges are golden brown. The center may still appear slightly gooey due to the cream cheese swirls, which is normal.
  6. Cool and Serve:
    1. Allow the cake to cool in the pan for at least 30 minutes before slicing and serving.
    2. Serve warm or at room temperature. Enjoy the deliciousness!

Tips:

  • For extra chocolate flavor, you can add chocolate chips to the cake batter.
  • Toast the pecans for a few minutes before adding them to enhance their flavor.
