-If you’re going for extra crispy tortillas, fry each one in some vegetable or canola oil on each side for a few minutes, until crispy, and set them aside on a paper towel lined plate to cool before constructing the rest of the pizza.
Ingredients:
1.5 lb ground beef
1 taco bell seasoning packet
1 large can of refried beans
1 large can of red enchilada sauce
10 corn flour mix tortillas (fry individually)
1 large tomato diced
1/4 medium onion diced
3+ cups shredded cheese
Chopped green onion
Instructions:
-Brown meat. Drain. Put back in with seasoning pack as per directions.(1/2 to 3/4 cup water, simmer til most liquid absorbed), set aside.
-Heat beans in a pot or microwave. Use a slight vegetable oil to fry each tortilla.
-Layer the bottom of the casserole dish with fried tortillas. Layer beans across.
-Layer seasoned meat across. Pour 1/2 the can of enchilada sauce across evenly. Add another layer of tortillas. Evenly pour the other 1/2 can of enchilada sauce across.
-Sprinkle diced tomatoes and yellow onion across the top. Spread cheese across the top. (Tomatoes and onions can be on top or bottom of that layer of cheese).
-Bake until the cheese melted and the sides start bubbling—about 20 minutes at 350.
-Garnish with green onion after cooking. Let stand 10 minutes then serve.
