Ingredients

  • For the Dough:
  • 2 1/2 cups 2 1/2 (300g) all-purpose flour

  • 1 tablespoon 1 sugar

  • 1 teaspoon 1 salt

  • 1 cup 1 (227g) unsalted butter, cold and cut into small cubes

  • 1/2 cup 1/2 (120ml) ice water

  • For the Fillings:
  • Scrambled eggs

  • Cooked and crumbled bacon or sausage

  • Shredded cheese

  • Chopped vegetables (bell peppers, onions, mushrooms, etc.)

  • For the Egg Wash:
  • 1 1 egg, beaten

Directions

  • In a large mixing bowl, combine the flour, sugar, and salt for the dough. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Roll out one disc of the chilled dough on a floured surface into a rectangle, about 1/8 inch thick.
  • Cut the rolled-out dough into squares or rectangles, depending on your preference and the size of your pockets.
  • Place a spoonful of scrambled eggs, cooked bacon or sausage, cheese, and vegetables in the center of each piece of dough.
  • Fold the dough over the fillings to create a pocket, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.
  • Place the assembled pockets on the prepared baking sheet, brush with the beaten egg wash, and bake for 15-18 minutes or until golden brown.
  • Allow the Breakfast Pockets to cool slightly before serving.
