  • 2 1/2 cups 2 1/2 (300g) all-purpose flour

  • 1 tablespoon 1 sugar

  • 1 teaspoon 1 salt

  • 1 cup 1 (227g) unsalted butter, cold and cut into small cubes

  • 1/2 cup 1/2 (120ml) ice water

  • For the Fillings:
  • Scrambled eggs

  • Cooked and crumbled bacon or sausage

  • Shredded cheese

  • Chopped vegetables (bell peppers, onions, mushrooms, etc.)

  • For the Egg Wash:
  • 1 1 egg, beaten

Directions

  • In a large mixing bowl, combine the flour, sugar, and salt for the dough. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
