Banana Pancakes!!!

Fluffy, homemade banana pancakes! Need I say more? There’s nothing like a delicious, fluffy stack of pancakes in the morning (or evening!). And these banana pancakes are some of the best around! They’re easy to make and taste amazing with a little bit of cinnamon and banana flavor. Not only does the banana add flavor, but it also adds moisture and natural sweetness. These pancakes are sure to be a hit with the whole family!

If you love bananas and pancakes and you’ve yet to combine the two, you’re in for a real treat! These banana pancakes are fluffy, flavorful, and oh-so-delicious. Give them a try, and let me know what you think!

Light and fluffy, these pancakes are great on their own. However, sliced bananas, blueberries, chocolate chips, and chopped nuts also pair well with the pancakes.

Apples are thinly sliced and lightly sprinkled with stevia mixed with cinnamon!

INGREDIENTS

2 Bananas
2 Eggs
1 tsp Vanilla
1 tsp Baking Powder
1/4 tsp Cinnamon

DIRECTIONS

Put all ingredients in a food processor and blend well. Use a 1/8 cup for measuring batter on a griddle prepared with cooking spray. Cook pancakes 2-3 minutes on one side and flip – then cook for another 1-2 minutes.

In a small bowl mix together stevia (I use Truvia) and cinnamon – you can also use the brown sugar blends.

I made some for my husband with dark chocolate chips and a dollop of whipped cream! He loved them!
