BAKED CHEESE BROCCOLI PATTIES

Delicious and wholesome dinner side dish, this incredibly healthy veggie-filled recipe is so tasty that children will be convinced they’re not eating their veggies at all.

Kids hate veggies! There’s no better way to put it. Trying to get them to eat their veggies is nightmarish! It’s like trying to force a camel through the eye of a needle. Almost impossible! But one thing that matches children’s hatred for vegetables is their love for incredibly delicious food. If it’s delicious, then they’ll eat it, even if it’s veggies.

And that’s what this baked cheese broccoli patty achieves. Filled with s much cheese, this recipe is a yummy delight for kids, and for adults too. It’s incredibly tasty and most-importantly, healthy.

It’s also really easy to make, and is an amazing option for a school night dinner or just to give your kids a treat. I don’t know how it happens, but they keep asking for more of this. They’ve never asked for more broccoli before!

Ingredients

16 ounces broccoli, fresh
½ onion, finely chopped
2 cloves garlic minced
¾ cup bread crumbs
2 eggs, lightly beaten
½ cup Cheddar cheese, shredded
1/3 cup Parmesan cheese, grated
1 ½ tablespoon avocado oil
Salt
Pepper

Cooking Instructions

Step 1:

Heat oil and cook onion and garlic in a small skillet for about 7 minutes or until soft, set aside to cool. Blanch the fresh broccoli for about 2 minutes and chop into small pieces, then transfer to a large bowl.

Step 2:

Add breadcrumbs, lightly beaten eggs, Parmesan cheese, Cheddar cheese, onion and garlic to the bowl, then season with salt and pepper to taste, and mix until it is combined.

Step 3:

Preheat the oven to 400 degrees Fahrenheit. Line the baking sheet with parchment paper, and form the mixture into patties. Then cover the lid with plastic wrap and fill it with the mixture, lightly pressing it down. Flip the patty out and repeat with the rest of the mixture.

Step 4:

Transfer patties to the prepared baking sheet and allow to bake in the preheated oven for 15 minutes. Flip and bake again for another 10 minutes. Remove and serve!

Tips:

You can shape a perfect patties using a lid

Covering the lid with plastic wrap helps to remove the patty easily.

If you notice that the eggs fall apart easily, add an extra egg to make the eggs firmer.
