The Amish Country Casserole makes an economical yet creamy diner that is perfect for large group. Here is an amazing Amish City Casserole for about 8 to 10 people.

The recipe for this dish is very easy to master. The good news is that it can easily be doubled or tripled for a larger crowd. You can also add vegetables to give your dish an extra stretch.

Since I started making Amish Casserole, I find it interesting to add slightly fried mushrooms, peas, broccoli and sometimes I do add carrots. It all depends on your personal preferences as long as it adds an extra flavor. I realized that carrots take longer to cook so my family doesn’t like it when I do use carrots.

Everyone in my family loves mushrooms. This makes the work so easy for me. I always try to add some every time I prepare the Amish Country Casserole. The trick is to saute the mushroom before adding ground beef to the heated oil. When this is done, you just follow the recipe for the other details.

I have been making this dish long before I started blogging. I made note of the fact that this dish has been handed down from generations of the Amish Country people. I was curious about some facts, so I thought of going back a few generations. Did they really have canned soup homemade and bottled? It is such questions that I needed to find answers to.

Since it is a big dish that is also tasty, it is good to have second helpings at hand.

I have had to reduce the size of my dish since my son moved out. I now freeze half the dish instead. Simply cool the casserole before transferring it to the freezer.
Note, It is vital to use a thick cream of soup. Make sure it is the best quality as it is the cream that gives your casserole the flavor.

Ingredients

-500 grams of pasta(Your choice) -1 TB olive oil( extra virgin)
-1 chopped onion
-750 grams lean ground beef
-1 can of tomato soup
-1 can of mushroom soup
-1 cup of milk
-1/2 teaspoon paprika
1/2 teaspoon dried parsley.

Instructions

Start by preheating your oven to 180 degrees Celsius. Then spray a cooking dish with cooking spray. Cook the pasta in a large pot according to the given instructions on the packaging.

While you cook, saute the onions in olive oil. Give them time until they get very soft. Now add the ground beef and cook until the beef gets ready.

Once the pasta is done, drain it and return it to the pot. Now add the cooked beef, mushroom and tomato soup, and milk to the pasta. Stir the mixture for a few minutes and season it with salt and pepper to add taste.

Transfer it to the prepared oven dish and sprinkle it with Paprika and Parsley. Let it cool down for a few minutes before serving with a salad or side dish if your choice. If the casserole is too much for one sitting you can always freeze the remaining one.
