Peanut Butter No Bake Cookies

Imagine you have a dinner party that is fast approaching and you have to make dessert. Unfortunately, the oven is taken with the preparation of the main dish, so you cannot use it to make your dessert. There is only one thing you can do. Make a no-bake dessert.

These peanut butter no-bake cookies are an excellent solution for when using the oven is just not an option. After you taste them, you will never want to use the oven again anyway! Their soft texture and nutty taste will remind you of your childhood, when the days were long and the sun was always bright.

The good news is, making them soft isn’t difficult because you’re not putting them in the oven. That’s why bringing the mixture to a boil and letting it simmer for one minute is so important. You can also microwave the mixture to make it even softer. If you follow the recipe closely, your cookies will be very soft.

Ingredients

1 c. granulated sugar
3/4 c. packed brown sugar
1/2 c. (1 stick) butter, cut into cubes
1/2 c. milk
1 c. smooth peanut butter
2 tsp. pure vanilla extract
1/2 tsp. kosher salt
2 1/2 c. old-fashioned oats

Combine sugar, milk, and butter.
Melt the mixture over medium heat, bring to a boil, and simmer for a minute.
Add peanut butter, vanilla, and salt to the mix. Stir.
Add in the oatmeal. Stir until smooth.
Use a spoon to prepare individual cookies and let them rest on parchment paper.
Let them sit for 45 minutes before serving.
