Ingredients

Main Ingredients
  • 2 medium beets, fresh Or about 1 cup chopped pre-cooked beets.
  • 8 ounces goat cheese Softened a bit.
  • 2-4 ounces cream cheese Optional, to mellow the tang.
  • 1/3 cup toasted nuts Chopped pistachios or walnuts.
  • 1 handful fresh herbs Chives or parsley.
  • 1 teaspoon honey or maple syrup Optional, for added sweetness.
  • Salt and pepper
  • Extras: orange zest, balsamic glaze, crushed pink peppercorns Optional additions.

Method

Preparation
  1. Preheat your oven to 400°F (200°C). Wrap each beet in foil and place them on a sheet pan. Roast for 45 to 60 minutes.
  2. Once done, cool the beets and rub off the skins with paper towels.
  3. Chop the beets into small pieces and blot them dry with paper towels to remove excess moisture.
  4. In a bowl, mash the goat cheese (and cream cheese if using) with a fork. Add a pinch of salt, pepper, and honey if desired.
  5. Lay a piece of plastic wrap on the counter, spoon the cheese mixture into a line, and use the plastic wrap to roll it into a log shape. Twist the ends like a candy wrapper and chill for at least 30 minutes.
Coating
  1. Roll the chilled log in chopped beets first, then again in the chopped nuts and herbs.

Notes

Ensure to dry the beets well before mixing to prevent a watery mixture. Soften goat cheese before mixing for a smoother consistency. Can be served with crackers, crostini, or veggies.
