Ingredients

For the Chicken
  • 1 to 1.5 pounds boneless skinless chicken thighs or breasts (thighs stay juicier)
  • 3 tablespoons honey
  • 1 zest zest of 1 lime
  • 2 juices juice of 2 limes (or more if your limes are small)
  • 2 to 3 cloves minced garlic
  • 1 tablespoon soy sauce (optional) adds depth and color
  • 1 to 2 tablespoons oil for cooking
  • salt and pepper to taste
For the Avocado Rice
  • 2 cups cooked rice (jasmine, basmati, or whatever you have) fresh or warmed leftover rice
  • 1 large ripe avocado
  • 1 squeeze extra lime juice for the rice
  • a small handful chopped cilantro (optional)
Optional Toppings
  • sliced jalapeno
  • chopped green onion
  • sesame seeds
  • crushed tortilla chips

Method

Preparation
  1. Get the rice going. If you have leftover rice, warm it up and keep it ready. Fresh rice works too, just cool slightly before mixing in avocado.
  2. In a small bowl, stir together honey, lime zest, lime juice, garlic, a pinch of salt, pepper, and soy sauce if using. Taste and adjust sweetness with honey or tanginess with lime.
Cooking the Chicken
  1. Heat oil in a skillet on medium to medium high. Add chicken (pat it dry for better browning). Season lightly with salt and pepper. Cook until golden and cooked through, timing depends on thickness.
  2. Lower the heat, pour in the honey lime sauce, and let it bubble for a minute or two. Toss the chicken to coat in the sauce.
Making the Avocado Rice
  1. In a bowl, mash the avocado with a fork. Stir in warm rice, a squeeze of lime, a pinch of salt, and cilantro if desired.
Assembly
  1. Add a scoop of avocado rice, top with chicken, and spoon extra sauce over everything. Finish with jalapeno, green onion, or other desired toppings.

Notes

For best results, pick ripe avocados. Adjust flavors at the end if necessary. You can also swap rice for quinoa or cauliflower rice if desired.
