Ingredients

Pasta Ingredients
  • 8-10 ounces Pasta (spaghetti, penne, fusilli, or whatever you have)
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter (optional but recommended for richness)
  • 3-5 cloves Garlic, minced
  • 2 tablespoons Tomato paste For deep, cozy flavor
  • 1 cup Heavy cream or half and half for a lighter version
  • 1 cup Parmesan, grated Plus extra for topping
  • 1 cup Pasta water, reserved
  • Salt and black pepper
  • 1 teaspoon Italian seasoning or dried oregano and basil
  • pinch Red pepper flakes (optional)

Method

Preparation
  1. Boil the pasta in a large pot of salted water until just done. Before draining, reserve about 1 cup of pasta water.
  2. In a large pan over medium heat, heat olive oil and butter. Add minced garlic and stir for about 30 seconds until fragrant.
  3. Stir in tomato paste and cook for about 1 minute until darker and fragrant.
  4. Pour in the cream, add Italian seasoning, a pinch of salt, and black pepper. Stir and let bubble gently for 2-3 minutes. Add red pepper flakes if desired.
  5. Lower the heat and stir in grated Parmesan until melted. If the sauce appears too thick, add some reserved pasta water.
  6. Add the drained pasta to the sauce and toss until the noodles are coated, adding more pasta water as needed for a glossy sauce.
  7. Taste and adjust seasoning with more salt, pepper, or Parmesan to your preference.

Notes

For a fresh pop, squeeze a little lemon juice at the end. Customize with proteins or veggies as you wish.
